“Short recipe cocktail to serve anytime” Prelude Named after a renaissance painter The Bellini was invented in 1948 by Arrigo Cipriani, son of Proprietor of Harry’s Bar in Venice. This cocktail pays tribute to the works of Giovanni Bellini (1430-1516), which were the subject of an exhibition in Venice in 1949. The orange tinged rose color of the peaches used in the recipe are reminiscent of the luminous colors or Bellini’s paintings. What you need • 2 yellow peaches • 2 measures Champagne Brut ‘frappe’ Directions 1. Peel the peaches and cut into half to remove the stone (pit), then place them into a blender and blend into a puree. 2. Place 1 measure of peach puree in a Champagne flute and slowly pour on the Champagne. 3. Stir gently with a mixing spoon for 2-3 seconds. Serve immediately.
