Mojito
"Long cocktail to serve at any time"
Prelude
The Daiquiri's great rival The Mojito was a created in Cuba during the American prohibition period. It was modelled on the Mint Julep that was at that time, the favourite drink of the Americans staying on the Island. The Mojito became popular thanks to the Bodeguita del Medio, a bar whose motto was" 'Hemingway drinks Daiquiris at the Floridita and Mojitos at the Bodeguita!'
What you need
• 8-10 fresh mint leaves • 2 mixing spoons caster (superfine) sugar • 4-5 ice cubes, crushed • 1 measure white Cuban rum • 1/2 measure fresh lime juice • 1-1/2 measure soda water (club soda)
Directions
1. Wash the mint leaves and place them in a highball glass. 2. Crush them with a pestle, then add the sugar. 3. Add the crushed ice and the other ingredients. Stir with a mixing spoon for 8-10 seconds. Serve immediately.
Variation: Mojito Criollo Add 3-4 drops of Angostura bitters and you have the Mojito Criollo, a slightly bitter long drink that can be consumed at any time.
