How To Arrange Back Bar

Since the back bar won't be operated on a daily basis like the main bar, it's usually broken down at the end of the weekend, and the beer and liquor is put away in storage or taken to the main bar. This means that the back bar needs to be set up everyday. Depending on the size of a bar or nightclub and how busy it gets, the establishment might have a second bar in the back that will open on weekends, or big drinking holidays like St. Patrick's Day or Thanksgiving Eve.

Instructions:

Step1. Clean the bar area with a cleaning solution like Formula 409. This means the bar top, the sinks and stainless steel fixtures behind the bar, and the taps (if there are any - back bars sometimes don't have them).

Step2. Lay down a layer of ice about 2 inches thick on the bottom of the ice case (where you'll keep the bottles of beer).

Step3. Fill the case with beer. If you have a popular beer or beers that you sell a lot of (such as Miller Lite), you'll want to dedicate more space to these beers than you would to a brand that you don't sell that much.

Step4. Fill the case with ice so that the beer bottles are covered at least to the tops (if you have a few hours before the bar is being used, you might want to cover the bottles entirely).

Step5. Set up the speed rack (the speed rack is the rack behind the bar that the liquor bottles are kept in). Generally, you'll keep your house (cheapest) bottles of vodka, gin, rum, tequila, and Triple-sec on the rack by your soda gun. This is done as you usually use these bottles the most, and they're the five liquors that go in a Long Island Iced Tea. For the rest of the speed rack, keep the types of liquors (whiskeys, gins, rums, vodkas, etc.) grouped together.

Step6. Stock the bar with supplies such as bar towels, napkins, straws, shot glasses, highball glasses, pint glasses, plastic cups, and coasters.

Step7. Prep your garnishes (limes, lemons, oranges, cherries, and olives).

Step8. Get the cash for your register, maybe light a few candles on the bar for ambiance, and you're ready to go.
